Right click on the menu icon, select preferences.
On the right hand side in the editor you will see "applet text" Bianca - change to Cassandra
Had the problem too, because I have home on a separate partition and some settings survive there.

you mean the boot splash - that's trickier to hot to think about it now have to get back when it's cooled down a bit
