Okay I'm at my wits end. I did an update a few days ago, and then suddenly I was no longer able to boot into mint or my dual boot of win10. I'm just presented with a screen saying:
Reboot and Select proper Boot device
or Insert Boot Media in selected Boot device and press a key_
It's like grub has been deleted somehow, and I can't get it back no matter what I try.
Spec:
MSI x470 gaming plus
Ryzen 7 3700x
nvme drive
Can't boot after update

You failed to tell us what O/S had the update.
Winwoes is notorious for screwing up the grub file when it updates, check out the link it should help you..
