I tried originally doing the complete install by first shrinking the partition on my hard drive. However it would only let me shrink it by 2GB, even though I have about 300GB free, and I am defragmented. How can I bypass this? Is there a way to completely install Mint using Mint instead of my Windows 7 64bit?

Could look that over, explains a bit about the issues you're having. Can't guarantee you'll find the fix there, can't hurt to look at. Think there's some good tips/info and links in that thread. It's about vista, but the info and many of the headaches ( immovable files) and the solutions apply to win7 too. Not to mention posted a link to what I consider to be a good how to on dual booting in general, some decent general tips here and there too.
