The "correct" way is to uninstall the kernel Image/headers you don't require through Synaptic, and that automatically removes them from Grub.

Another way of changing the menu.lst for a updated kernel would be not to rename, backup, or uninstall. Just edit the file and comment (#) out the old Kernel. That way if the new kernel did not work out, then you would just have to uncomment the old kernel. So, do not uninstall a old kernel until you are absolutely sure the new one is stable.
