rsync/grsync

I'm trying to use grsync to backup certain folders in my home folder and not the entire home folder itself.
Is this possible? I have been looking but haven't found a answer.

Yes certainly grsync will. Just make sure the paths to the source and destination are correct.

Am I able to select multiple folders at the same time? for example /Downloads /Documents /Pictures all at the same time.

I do not know how to string multiple source/destinations within grsync itself--but I have used a simple script to perform multiples with rsync

I used to automate the script in cron, but now just run it directly from the script itself or via terminal
