Has anyone an idea when it will be available Vim 8.0 on LinuxMint?
It appeared in September 2016, almost a years and a half ago!!
There's still the old 7.4 version...

Does 7.4 have security vulnerabilities that can only be patched by upgrading to 8.0? If not, that's the reason you don't get it as an upgrade. You do not get new feature releases just because. Linux Mint uses a long-term supported package base. It is stable and secure. With a few rare exception, programs do not get new feature releases but only security and bug fixes.
Linux Mint 19, due just before mid this year, will switch to a newer long-term supported package base and that will have vim 8.0.

For vim? Yes, if they are needed. Last security update for vim was in 2016 as you can see in the changelog http://changelogs.ubuntu.com/changelogs ... /changelog.
