What have you tried?
What language is used for spelling check is stored per website. You can right-click inside a text edit field and from there change the language used for that website. Or install additional dictionary from there.
To disable spelling check entirely go to preferences. In the general category scroll down to the language section and untick the box "check spelling as you type". This disables it on all websites for all languages.
