Access Date on USB

I have LM 20.1 and a USB Stick formatted as VFAT. When I copy a newly created file to the USB stick the Time Stamp for Created, Changed and Modified on the file is correct. But the Access Time Stamp is yesterday at exactly 8pm (2000.00). I’ve tried this over a few days and it is the same time every time: Yesterday at 8pm. Can someone explain to me what is going on here? Thank you.

By which I now know you live in the UTC-4 timezone. Ha!

That's to say, FAT stores the date but not time of last access; Linux assumes/sets 00:00. "Today 00:00" interpreted in UTC is "Yesterday 20:00" when you're in UTC-4.
