Document Scanner defaults to .pdf - can I make it .jpg?

LINUX MINT IS AWESOME. Thanks all!
But:
It would be sweet if I could change the default "save as" for Document Scanner to .jpg. That option isn't available in "Preferences"... is there some clever way to change it?

After you have clicked on "Save document to a file", the "Save As" screen appears. At the bottom left of that screen click on PDF to reveal other file formats.

Thanks khyphi but in MATE there is no "save as" screen popup after a scan. Instead, you have to click the icon that looks like a 3.5" diskette to open the "Save document to a file" window. In there is the drop-down text box you mentioned for what format to save as... I switch it from .pdf to .jpg and save the scan, then click START AGAIN but the next scan still defaults to .pdf. I'd like to change some setting to make it default to .jpg. ???
EDIT:
I went to Package Manager and installed Skanlite. It has lots more settings but no matter what i change it defaults to .png. (sigh)

UPDATE:
I booted a live CD of Rebecca 17.1 which has Simple Scan v3.12.1 which is PERFECT.
Apparently Simple Scan ended in 2017 but I want it back. I downloaded the last-ever version from here:

But how do I install it? I followed the instructions in the README.md but got stalled here:
doug@doug780:~/Desktop/SIMPLE SCAN/simple-scan-3.25.1$ meson --prefix $PWD/install build/
ERROR: Neither directory contains a build file meson.build.

(the simple-scan-3.25.1 folder DOES have a file named, meson.build)

AND.... "Simple-scan" inside the Software Manager isn't simple-scan, it's just the same old Document Scanner.

xsane is another scanning software that I use. It is not intuitive, but does a pretty good job.

Thanks for trying, mikeflan. I've used xscan before but now I've tried it again. It's no 'simple-scan'. Simple-scan wasn't robust, but it was SIMPLE, exactly what I liked and I miss it. Is there any way to install simple-scan-3.25.1 under the latest Mint?

I don't see where you tried this, but maybe you have:

obtained from that site you mention:

Does this give unmet dependencies?

Yes, I tried those, following the installation instructions under "README.md", and inside terminal it threw a stop error saying I needed to have a login of some sort to access files. (sry no exact wording but I'd already given up and deleted all my notes).

Really, Document Scanner works dandy. There HAS to be some way to swap the .pdf default to make the default .jpg. Isn't there some .config somewhere I can open and modify? Nothing here looks promising:

locate Document Scanner

Results:
