Download a FireFox icon of your choice from the internet & save it somewhere notable in your /Home directory.
Right mouse click on your desktop launcher & select properties.
Left mouse click on the current icon & then Browse to get to where you saved your icon.
Click on the icon/OK for a couple of times & close down the properties box..
Done..

- right-click launcher and select Properties
- click on the generic icon ("rocket") on the left
- in the "Choose an icon" dialog click "Browse" button
- navigate to
/opt/firefox/browser/chrome/icons/default/
directory and select the default48.png
icon, then click "Open" button, click on that icon and click "Select".Edit missed RIH comment above, sorry

on our Mint, I would suggest from our icons you look in /usr/lib/firefox/browser/chrome/icons/default and choose from the list

i uninstalled Firefox non-ESR
