I am using LMDE 201012 on a desktop.
Yesterday I installed the LibreOffice application and all modules are working properly.
My questions. Is it safe to remove all applications which relate to Open Office. Will an 'uninstall" from the mintmenu remove everything?

There's probably no need to uninstall OpenOffice
If u don't want to see them,right click the Mint Menu,then edit menus,click office and just unclick the Open Office boxes.

I would say to use Synaptic to remove libreoffice, and then install openoffice.org. Or if you like to do things manually: and find the libreoffice equivalent to "openoffice.org", then
Mintmenu's uninstall isn't a complete purge, and might leave traces of libreoffice behind, but you can always do the step/s above if it does that.

OOo is well integrated into Ubuntu, and some important packages depend on it, such as hunspell, myspell, localization meta-packages, thesaurus, etc.
⇒ I don't recommend uninstalling OpenOffice.org!
Remove OpenOffice.org (and dependencies) at your own risk:
sudo apt-get remove openoffice*
If you also want to remove OOo configuration files, use the purge switch:
sudo apt-get remove --purge openoffice*
