I don't find any way to configure the menu.
I wish I could
* add programs in the favorite (and take away some)
* make my own categories
* and so on

I use mint 12

You can do 1. in the activities window (move your mouse to the top-left).

You can do 2. with the menu editor aka "Main Menu" aka Alacarte (it's alacarte in the repository)
