Have you checked already the settings under "Configuration" tab in PulseAudio Volume Control (pavucontrol)?

PulseAudio shows this:

Screenshots often are not that useful. Is that the only option in that popdown menu?

It's a big long list of options from Analog to 7.1 Surround Sound. The dropdown menu won't let me take a screen grab to show all the choices.

The later you should turn off the built in audio , should be one of the options. then disconnect the hdmi and reinsert it , it should work.
I have an integrated graphics chip. All I originally did was plug the HDMI cable into the HDMI port on the back of the Nuc and sound worked fine up until a couple days ago.

I tried uninstalling alsa and pulseaudio and then reinstalling. This didn't work.

See if this helps any:

aplay -D plughw:0,3 /usr/share/sounds/alsa/Front_Center.wav

If nothing, change 3 to 7. Still nothing, change 7 to 8. Still nothing, change 8 to 9. Lastly, change 9 to 10.

Which, if any, worked?

If I knew what the magic was I'd write it down in case it happens again :).
