MacBook Air 2008 Touchpad Tap to click
I have just installed Linux Mint 18.3 Cinnamon and it works great, better than the Ubuntu 16.04 that I was using before. The only big issue is that the touchpad is way too sensitive when I enable tap-to-click. it clicks every time I touch it to move the cursor. Is there a way of reducing its sensitivity so that I can return to using tap to click?

Re: MacBook Air 2008 Touchpad Tap to click
Go to Menu > Preferences > Mouse and Touchpad > Touchpad
and disable "Tap to click"
you should still be able to click with the button in the bottom part of the touchpad.
Note you can also try to configure multitouch gestures (e.g. 3 fingers, 4 fingers) with touchegg, available in the Mint repositories. (for me, 3 fingers gesture work but not the rest. I dont have the same machine though)
