I have a 'dream build' for a future computer but I was wondering, would I have any problems running Mint on it?

The things that could be a problem are the gaming keyboards. See, for example:

Almost certainly you will be able to get them working, but it might not be plug-and-play. The CPU may require installing a newer kernel for best results. I found several posts online from people running Linux on Z370 motherboards.
