Hello,
This morning I installed Linux Mint XFCE on my computer, which has two touch screens.
However, at startup, Linux recognizes only one screen.
In the settings, I only have one screen, and yet both are plugged in well.
Is there a setting or something that I missed that could cause Mint to recognize the 2nd screen?
Before doing the installation this morning, my PC was on Windows 10 and both screens were very well recognized.

Welcome to the forum, Gigab.
Sometimes this type of situation can happen if all the graphics drivers have not installed properly. We would need to see the information requested in Section 5 of READ: How To Get Help! to know if that might be the case in this situation.
Please give us information about your install by entering this command in a terminal:
inxi -Fxxxrz

from the mini toolbar above the textbox where you type your reply and then place your cursor between the code markers and paste the results of the command between the code markers [code]

. This will let us know how Mint sees your hardware.Please also let us know what type of connection (DP, HDMI, VGA) you are using to attach your monitors to your computer/GPU.

Your system is too new to be using the 5.4 LTS kernel which comes standard with Mint. It does not have the necessary graphics driver needed for your hardware.

Make sure 5.11 is selected on the left panel and then click the top-most option on the right panel. An "Install" button will appear. Install the kernel and then reboot for it to become active.
That will install the correct graphics driver and I expect both monitors will then work. Your system is currently running in software rendering mode (llvmpipe) which can not support two monitors.

Ok il will do that .. but 5.11 is supported until February 2022.. what whill happen in 2022 ? i will have obsolete kernel without update ?

A newer kernel will be available before February and you will update to it to continue to receive a supported kernel.

Yes. Presuming they are working with the 5.11 kernel now. (There are other issue which can cause the monitor not to work, but a missing driver is the most common issue.)
The older kernel did not have the necessary graphics driver (because it was made before your hardware came out), but any newer kernel will contain the drivers.
