I have 2 hard drives that are the same model, except one has 4TB and the other has 3.
Mint automatically labels them for me "Elements" and "Elements1" because they both want to be "Elements" by default.
Things get interesting when I try to give them sensible individual labels in Disks > (select main partition on an Elements hard drive) > Edit Mount Options
If I change one to have a custom mounting point and label, everything seems ok when I save. But when I go to edit the other one, it now has those details too. Saving my mounting details duplicates across both drives when just editing one.
How can I force Mint to distinguish between these 2 drives properly?
Cheers

Try using Gparted (available in Software Manager) to rename the drives. (you will need to unmount them first.)
