3 Random states of my RAID tower after boot

When I boot into Linux, my external SATA RAID tower randomly comes up in 1 of 3 states:

1. Not seen by the OS at all. (About 60%-ish of the time).
2. Seen and mounted, but can't write to it. (about 40%-sh of the time)
3. Seen, mounted, and writable (about 5% of the time, and is, of course, the preferable state! ;).

The drive works 100% of the time when I boot up to Windows. I've been using it for about 3 years. I have 2 SSDs for dual boot... one with Windows, one with Linux Mint 19, plus this external 12TB SATA RAID drive, which is my data drive.

I recently switched to Linux about 3 weeks ago. When I first set it up, I had no trouble with my RAID tower, aside from the fact it was not writable. I presumed it was because it was NTFS + was encrypted with VeraCrypt (per responses of others online with similar problems), so I booted up to Windows and decrypted the drive, which took EIGHT DAYS (it's a 12TB array)).

When it finally completed decryption, I booted to Linux and it was STILL read only! After a few boots, it was writable. But every time I reboot, it's a crap shoot to which of the 3 states above that I'll get. Last night I could not get it writable. Tonight, I've spent 2 more hours of rebooting and changing boot orders in the BIOS to to avail. I randomly get either no RAID drive at all or it's there, but read only.

Any help would be GREATLY appreciated! Aside from this one BIG issue, I'm ecstatic about how well Linux has been. I don't want to use Windows just so I can use my drive.

I'm guessing reformatting it to ext4 would probably yield better results, but I'm unaware of a way to change to format without losing everything on it and I don't have the funds and won't for a while for another 12TB to back it up.
