I made a netstat with only Google Chrome and Brave started and I see this :
many lines as
edge-msgr-latest-:https ESTABLISHED
and 2 lines as
dns9.quad9.net:domain ESTABLISHED
Do you know why ? because i have unbound installed and so the DNS (9.9.9.9) i ve put in my " ISP box" should not be in use

it is though really difficult on Linux to know where the DNS requests go ... I am not sure but I remember that on windows XP I had this in the Comodo Firewall interface in a list of all connections

You are not saying in your question if you checked Brave and Chrome settings
for example, Brave
Menu --> Navigate to Settings.
On the left side of the menu, scroll down and click Additional settings.
Navigate to Privacy and security > Security.
Enable or Disable Use secure DNS.
With Custom you can choose another service provider, for eg 1.1.1.1
for example, Brave
