Force applications to use specific WiFi networks

I suspect this is one of those easy questions with a complicated answer.

I have two separate WiFi NICs. One built in (wlan0), one USB external (wlan1). I'd like some applications to use wlan0 only (which has access to the internet) and some applications to only use wlan1 (which goes off into a collection of devices which don't need internet access).

It strikes me that each network is going to have different IP addresses and so on, but I'm not sure how to turn that into a solution. Does anyone know of any obvious solutions that I can set up from the command line / a config script to make application A use wlan0, application B uses wlan1... etc.

I will accept an "RTFM" answer if it's accompanied by a link to relevant manual! Many thanks.

Assign one to a static IP address and use firewall (ufw) to only allow connections to that IP for those apps.
