What are we eating today?
I made a big pot of my chili which everyone loves. Recipe below. Also I made eggs and country sausage for the spouse unit and youngest.
3 lbs coarsely ground meat (I use 2 lbs 80/20 ground beef and 1 lb ground pork)
1 large onion, finely chopped (I use red onions)
3 cloves of garlic, finely chopped
1 teaspoon of ground oregano
1 teaspoon ground comino (cumin)
4-8 oz of good quality chili powder (you can add more or less as for your taste)
1 can of Rotel diced tomatoes and green chilis
2 large (15 oz) cans of tomato sauce/crushed tomatoes ( I use crushed tomatoes these days, it just works better)
2 cups of water
1 can of tomato paste
1 teaspoon salt
2 teaspoons of paprika
1 teaspoon of ground cayenne pepper
brown the meat, onions and garlic together. After it is browned, pour off almost all of the fat, and add all the other ingredents. Simmer for at least two hours on very low heat. DO NOT LET IT BURN! Check the water every so often.
Serve with beans (ON THE SIDE!!!!), grated cheddar cheese, rice, and saltine crackers.

Had eggs this morning. Don't know what we'll have later. We hosted Thanksgiving dinner so we've got lots of leftovers.

Made the worlds most delicious chili dogs for lunch, just thinned down the chili a bit, added Hebrew National hotdogs, red onion diced small, and mustard, it really hit the spot. Just the perfect comfort food.

Normally, I have Post Shredded Wheat w/o sugar, but for some reason, the shelves were empty this week when we drove the many miles into town..... so, we came home with the Aldi's brand with Strawberry coating.

I've had fries from Wendy's, Burger King, McDonalds, Culvers, Five Guys, Denny's, Perkins, and various local-type places, and Five Guys rules them all.

You know there are certain fast food places that make what I call "comfort food" that bears no relationship to real original food, such as Panda Express which is NOT real Chinese cuisine, but at times is just what you want- Mmmmm Orange Chicken. The same goes for Five Guys burgers, they are good, but their fries....!
This weekend, my Salisbury steak is on the menu, along with noodles, and possibly some grilled asparagus.
Also post some of your best/favorite menus/recipies for others to try!

No "Five Guys" within 100 miles of me that I know of....
Recently, I have been going to "Charlie's Chicken" and ordering their "Chicken Fried Steak" with mashed potatoes, that is just plain good, and the quality at our location has been consistent.

Just ordered my Christmas meat; a pork butt, and a brisket. Both are being smoked/BBQ'ed for me by a buddy, so it will be pulled pork, and brisket tacos for Christmas lunch. Yummmm.
Also been having Chili dogs with my chili, it just hits the spot.

Had instant grits with a pad of butter and a bit of pepper. We finished off the turkey and almost all the stuffing last night. Turkey is not a big hit with a lot of folks but for me I love turkey and stuffing (made with sausage) with cranberry sauce and gravy. I just like the tradition of finishing off the "left overs" for several days after Thanksgiving. As far as Aldi goes I have had hit or miss with them when it comes to the store brand but the deals are great. My favorite is Cosco but my wife won't let me go by myself anymore because I bring home way too much that she ends up giving away or ends up going to waste. Too bad we didn't have Cosco when I was growing up - big Irish family with 8 kids.

Pad Thai for lunch, with extra spice. Yumm. Omg, it was outstanding. One of life’s comfort foods.
