My Mom's amazing cookie recipe

Oatmeal Craisin White Chocolate Cookies
1 1/2 Cups (3 sticks) butter, softened (I use Kerrygold, it has more fat and less water)
1 Cup firmly packed brown sugar
1/4 Cup granulated sugar
1 Egg
1 teaspoon Vanilla
1 1/2 cups Bread flour (I use Bread flour because the cookies are a bit more soft/chewy)
1 teaspoon Baking Soda
1/2 teaspoon Baking Powder (if you like a thinner, crisper cookie, omit this.)
1 teaspoon ground Cinnamon
1/2 teaspoon Salt
1/4 teaspoon Allspice (or Nutmeg if prefer)
3 Cups Oatmeal (I use quick 1 minute oats)
1 cup Craisins (I use the 50% less sugar ones)
1 cup White Chocolate Chips
Preheat oven to 350o.
Beat butter and sugars until creamy.
Add egg and vanilla and beat well.
Sift the flour, baking soda, baking powder, cinnamon, salt and allspice. Add to butter mixture.
Add oats. Mix well.
Add Craisins and White Chocolate. Mix well.
Drop by rounded tablespoon onto ungreased baking sheet. (I use a 1 1/2 Tablespoon scoop, and I bake them on parchment paper)
Bake 8-9 minutes for soft and 10-11 minutes for crispier cookies, depending on your oven. Remove to cool on rack. (I bake them 10 minutes for soft, because I use parchment paper, they come out looking underdone, but I leave them on the baking sheet until the next batch is done, about 10 minutes, to 'finish'. I find it works better than cooking them longer, for a soft chewy cookie.)

Funny, the next post to this was on convert-all, so I installed it:

1 cup = 236.58824ml
350F = 176.66667C (gas mark 4)

For those of us in a metric world :D
And a craisin is a dried cranberry - I had to look that one up!
Sounds nice and as I do most of the cooking at home and five grandchildren....
