Kiosk Mode or something similar

A couple of friends and I have been working on a project that we'd like to incorporate a tablet device. We want the tablet to be locked down to a specific application that we have created. I understand that there are some proprietary options out there. There also seem to be some open source options (which is what I am after here) as well but these seem to be directed towards web browsers, which we do not want. We just want the tablet to run the application that we have created.

If anyone has had any experience or even ideas on how to approach this, I'd really appreciate the help.

I appreciate the response. Not exactly what I am going for though.

We only want the screen to act as a digital button. The only thing showing on the screen would in fact be a "button" of our design and this is all. The button triggers other functionality on the device (mic and camera) and also starts to send data to another device via WiFi. We thought about using an Arduino or Raspberry Pi to connect a button, mic, and camera, but tablets have all of these features so we figure it would be easier to work with in that regard. The problem now seems to be finding open source software that allows us to control exactly what we want to display and be functional on the tablet/smart device.
