Split Pea Soup

Split Pea Soup
Ingredients
• 2 ¼ cups dry green split peas (1 pound)
• 1 tsp instant chicken bouillon granules
• 1 meaty ham bone (1 ½ pounds)
• 1 medium onion chopped
• 1 14 tsp pepper
• ¼ tsp dried marjoram, crushed
• 2 medium carrots, chopped
• 2 stalks celery, chopped

How to Make It
1 Rinse peas
2 In a Dutch oven combine peas, 8 cups cold water, chicken bouillon, meaty ham bone, onion, pepper and marjoram
3 Bring to a boil, cover and simmer for one hour, stirring occasionally
4 Remove ham bone, cut off mean and coarsely chop
5 Discard bone
6 Return meat to soup
7 Stir in carrots and celery
8 Cover and simmer 30 minutes more
9 Season and serve

Apple Pear Salad

Apple Pear Salad
Ingredients
• 1 cup peeled and cubed red apple
• 1 cup unpeeled pear
• 1 cup red seedless grapes
• 1 tsp lemon juice
Dressing
• ¼ cups mayonnaise
• 2 Tbsp honey
• 1/8 tsp cinnamon
How to Make It
1 Mix ingredients together and toss in dressing

Asian Coleslaw

Asian Coleslaw
SERVES: 10-15
INGREDIENTS

• (1 lb) package Coleslaw
• 2 bunches of chopped green onions
• 1 cup sunflower seeds
• 1 cup slivered almonds
• 2 packages Asian or beef-flavor ramen noodles
• 3⁄4 cup oil
• 1⁄2 cup sugar
• 1⁄3 cup vinegar or white wine vinegar
DIRECTIONS
1 Crush ramen with almonds and toast
2 Mix in large bowl coleslaw, green onion, sunflower seeds, almonds, and broken up ramen noodles
3 In a small bowl mix oil, sugar, vinegar and the beef flavoring from ramen noodles
4 Mix the oil mixture with the coleslaw mixture and serve

Boil the crow with the rocks for 3 days.
When done, remove scum and drain all liquid.
Eat the rocks.

Ingredients
• 2 pounds pork
• 3 cloves garlic
• 5-6 sprigs cilantro chopped
• 2 tsp sweet paprika
• ¼-1 tsp cumin
• ¼ tsp ground coriander
• 1 tsp salt
• ¼ tsp pepper
• 1 tsp oregano
• 1 tsp ground cloves
• 1/3 cups cider vinegar

How to Make It
1 Mix with hands
2 Make patties
3 Fry and drain

Green Bean Casserole (Decadent)

Ingredients
• 1/2 cup finely chopped yellow onion
• 2 cloves garlic minced
• 2 shallots
• 12 ounces fresh mushrooms chopped
• 3 tablespoons butter
• 1 ½ Tbsp olive oil
• 1 cup cream
• 1 cup sour cream
• 1 cup chicken broth
• 1 can cream of mushroom soup
• Dry white wine
• 1 Tbsp Worcestershire
• 1/2 cup shredded white cheddar cheese
• 1 pound fresh green beans trimmed, halved, and blanched (boil 5 minutes, place beans in ice water for a couple of minutes, drain)
• 1 can quality French fried onions
How to Make It (Can make in advance but hold the French fried onions)
1 Preheat the oven to 350 degrees
2 Melt the butter and olive oil together. Add the onions and shallots and cook until soft and translucent, about 4-5 minutes
3 Add the mushrooms and garlic and cook for another 4-5 minutes until the mushrooms are soft
4 Once combined, continue whisking for another 2 minutes until the mixture has slightly deepened in color. Add the cream of mushroom soup, half-and-half, sour cream, Worcestershire, and chicken broth. Add some wine, drink the rest
5 Once slightly thickened, add the cheese and whisk until melted and combined
6 Let the sauce simmer for a couple of minutes, then add the green beans
7 Pour the bean mixture into a 9x13 casserole dish and sprinkle the French fried onions all over the top
8 Bake uncovered for 30 minutes

Pizza Sauce

1 cup of regular canned tomato sauce (brand name or no-name, whatever is on sale, or cheapest)
1 tsp salt
1 tsp oregano
1 to 2 tsp sugar
1/4 to 1/2 tsp black pepper

I find most pizzas you buy are a tad on the dry side, adding the whole cup of sauce to a 16 inch pizza is just right (IMO).

Yes Damien, that is home made "crust".
Pizza dough, (pretty simple, and delicious too)

2 to 2 and 1/4 cup flour (start with the 2, add more as/if needed)
1 heaped teaspoon yeast (and not a measuring spoon, just a regular coffee stirring spoon)
1 heaped teaspoon sugar (same as above)
1/2 tsp (or more) salt

stir that up, then add,

2 Tbs oil
1 cup warm water (100 F)

Stir, kneed, form a ball, place in an oiled bowl for 30 minutes. Then go. (as dough raises, chop vegies onions, and peppers for sure.)

EDIT, to add, just in case your interested in the rest of the rickNS way, I'll add it here.

I also don't prefer mozzarella cheese, too stringy, messy, instead I prefer double, or triple shredded cheddar for the cheese.
Hamburger if you use it, is pre-cooked (obviously) and seasoned with salt, pepper, garlic powder, and thyme.
Under that is of course, pepperoni, usually mild, sometimes honey-garlic.
And lastly whether or not they belong on a pizza, I love, and sometimes use pineapple tidbits.

Try that, and tell me you don't like it. I have a few votes saying "best pizza I ever had"

Having an overabundance of eggs, the chickens lay faster than we can eat them, I have been cooking a version this recipe regularly.

Egg casserole

Ingredients
12-13 large eggs
2-3 green onions, thinly sliced
⅓ cup milk
2 tbsp sour cream
½ cup shredded cheddar cheese
¼ cup bacon bits or ½ cup small ham cubes or ½ cup sausage pieces
¼ tsp salt
dash of pepper
½ cup very finely diced zucchini, sautéed and lightly salted (optional) OR
½ cup finely diced red pepper, sautéed and lightly salted (optional) OR
Spinach, kale, or mushrooms sautéed and lightly salted (optional)

Instructions
Preheat oven to 350 degrees.
Spray a 9x13 pan with cooking spray and set aside.
In a medium-size mixing bowl, add eggs, milk, sour cream, cheese, salt, and pepper. Whisk together until well mixed.
Add green onions, bacon, and any sautéed veggies. Mix well.
Pour mixture into the greased 9x13 pan.
Bake at 350 degrees for 25-30 minutes or until the center springs back when touched.
