You have the option of the Nvidia-340 or the nouveau driver. Those are your only two options for that graphics card.
Your computer has more than one graphics driver. Installing the nvidia driver should give you options of either Intel or Nvidia which can be changed by the nvidia-prime-applet. However, you probably removed the applet when you removed nvidia files.

There might be several reasons the Nvidia driver is not working properly. Is secure boot on? You can check withmokutil --sb-state

And finally, lets check the results of the X Server which runs the graphics. Use this command in a terminal to upload the X Server log file to termbin:

For your earlier question about getting grub to show, you can change the setting as described here this post so you see it on each boot.
Switchable should mean you can use either Intel or Nvida.
I do not understand what this means. Secure boot is either enabled or disabled. How are you enabling it but keeping it disabled?
Read a tutorial posted by a fellow member here on my thread . Having Secure Boot enabled or disabled is a separate setting from booting in EFI mode or Legacy BIOS mode. Maybe you are meaning these two different functions which each have their own setting?
Mint and Nvidia drivers can be installed when Secure Boot is enabled. Nvidia drivers can also be loaded if Secure Boot is enabled, but you would have to set MOK values to do that.
If you take a Timeshift snapshot of when your system has graphics (ie when nouveau is installed), then you can always use the install usb to boot to a live session of Mint and use Timeshift to restore to the snapshot. You would not have to reinstall Mint and run all the updates. You can take a one-time snapshot (on-demand snapshot) before you install the nvidia drivers. (You do not have to set up Timeshift to run all the time.) In fact, we recommend taking snapshots before making graphic driver changes.
I did not understand this so I went through some of your posts on this forum and found screenshots you made of the BIOS here and in a different thread here and then another one here. The middle link is where you talk about the setup mode and the date on that post seems to be the most recent image. In it, the Secure Boot Mode is set to custom and the Platform is in Setup Mode.

While your computer is in that age range, Linux Mint 20 is not. Generally speaking, you can run into issues using outdated information.
The statement from the article "Linux Mint does not use digital signatures and does not register to be certified by Microsoft as being a “secure” OS." is no longer true. Linux Mint (through Ubuntu) does have the signatures, so the premise that Secure Boot must be turned off is false.
While the article describes disabling Secure Boot, it also describes changing the 'Reset to Setup Mode' so the 'Secure Boot mode' becomes 'Custom' and leaves the 'Platform Mode' in 'Setup Mode'. The 'Setup Mode' lets you clear the preset keys from the manufacturer and define your own.
This link Disabling Secure Boot on the Lenovo IdeaPad U530 Touch Laptop has a BIOS that looks like yours and only requires changing the Secure Boot to Disabled. In that screenshot, you will see that Platform Mode and Secure Boot Mode were never changed.
I'm going to go with the hope the 'Platform Mode and Setup Mode setting does not matter and the fact Secure Boot is disabled is all we need.
While doing more searching, I came across this post where someone else with switchable graphics ran into the black screen issue after installing the Nvidia-340 Driver.
