Like the OP I enjoy building computers. For years I was always building / rebuilding desktops. It is a great way to better understand how computers work.
Now my job requires so much travel that I am not home much, so desktops never get used. Laptop goes everywhere with me.

I have never had a laptop... but I have always assembled my desktops. My last build was an AMD FX-8350 (8 cores at 4 gigahertz) with 16 gigabytes memory. With the dual monitor setup and 4 HDDs, Mint KDE only made sense. Windows will never touch this hardware outside of a VM.

I built my PC for Mint last year (Spring 2016). It's set up for dual monitors and displays 3840x1080 pixels across two screens. Most of the components came from Newegg and totaled under $600.00. The CPU is overclocked to 4GHz and runs wonderfully. I found less hassle by sticking with NVidia GPUs.
