I'm using Mint 20 with the Mate interface.
When using the panels, I tried adding Separator and it just added an empty space.
Among other things, I wanted to be able to use different-colored separators, i.e., the File Managers would be grouped with a green separator, Web browsers with a red separator, etc.
A very easy way to do that is Create Custom Application Launcher Name: "Sep" (or whatever), Command: none
Then point the launcher icon to your custom .png separator icon. I used 48x48.

You can also make a multi-color image and use it as the panel background to group the launchers
