Something i've been meaning to try for ages is adding Livedisk ISO's to grub and booting them from hardrive.
When you boot the ISO can you still access the HDD drive that it was booted from or is it locked out and hidden?
If that made any sense?

Iso isn't bootable from HDD. You have to install it to the HDD to boot.
When you boot from an installed iso, the disks are very much accessible.

having just read the guides about all the loopbacks i think it's best that i just carry on using a USB drive.

I had used this, only mint and ubuntu official derivate
but it is in Italian, you can try and see if it does what you want
install the grml-rescueboot package and then copy the iso to the /boot/grml folder and run a grub update

if you want to install the distro on a partition (it could also be used to access other partitions, I've never tried this thing and I do not know if the other partitions are accessible or not)

But only on legacy BIOS system. I have not been successful (yet) doing this on an UEFI BIOS system. Probably just from
my lack of knowledge. But would be interested if anyone else was successful.

I have try now the steps with grml rescueboot like I said before, and it work, I'm writing now from a iso of ubuntu 17.10 copied in /boot/grml in my Mint installation and booted from grub, and the partitions of my installation of Mint is accessible and I can copied file on live system in use, or on a usb media.

I've decided if i want to play with anything i'll use the newly updated gnome boxes in the above link as i saves messing about with grub.
