I've been doing some work on a CentOS 7 box.
I might have the option to install cinnamon.
I love cinnamon on my Mint box at home, but I have a strong suspicion that the Mint people put in a lot of work making cinnamon nice from the get-go for people who install Mint.
Has anyone ever installed cinnamon on a distro that did not originally come with it installed?
Is setting it up a PITA? A lot of stuff undone?
How much of a PITA is Cinnamon in other distros?

There's people involved with Cinnamon from other distros, and maintainers from other distros at times reach out with any packaging issues they might have. I can't say about CentOS. Considering CentOS 7 has 5 year old software I think you'll face some hurdles. A future CentOS 8 is likely a better fit. RHEL 8 is currently in Beta and I think CentOS 8 is expected after a final RHEL 8 release.
Fedora has a Cinnamon spin, openSUSE and Arch Linux have Cinnamon in their repos and many other distros have a Cinnamon spin or have it in their repos for installation.

I'm guessing YUM will only show me the version of Cinnamon appropriate for CentOS 7. Anything is better than GNOME-classic

The question I might ask is, why persist with CentOS if you want Cinnamon? Is there a specific reason?

I've used Cinnamon in Debian, and it worked just as well as in Linux Mint. Actually, it was noticeably faster.
