Does Linux Lite have support for this? If so, are there any instructions that are easy to follow?

I think your hardware matters more than your distro here. For example some old machines may not support virtualization, which it appears to me that anbox requires. It's easy enough to try.

Linux Lite is another Ubuntu based distro like Mint. I don't think there's anything that's likely to be easier than a Ubuntu based distro,
