For our applications I do this in two st\ages The first is to install the Mint OS from a download followed by a bespoke install script for optional packages, icons and wallpaper, and finally our software packages. The install script is written in Python...

The refractasnapshot command will build an image of your running system...then a bootable ISO of that image...and it 'just works'. The command comes built-in to the Refracta distro and devuan have adopted it. You'll have to put in a bit of work getting the command into Mint and working, though, because it's not in the Ubuntu repository. That's possibly less work than learning how a Live Session actually gets frozen into an ISO and doing it all yourself.

If you can find an Ubuntu-compatible automatic method, use it... http://www.linuxrespin.org/

Obviously Linux Mint itself has tools for the job, behind-the-scenes and maybe even not-for-public-release.

Remember you can't change a distro and call it 'Linux Mint' in any public way, because the name and graphics belong to the project. In-house or between friends is different.
