Libreoffice adopts your current desktop theme. This maybe changed by changing the desktop theme, but that will change the look of the desktop and all other applications.
If Libreoffice uses GTK, you can start it with a different installed GTK theme, e.g. "env GTK_THEME=elementary libreoffice...". Else, disable GTK integration. Then LO will use factory default theming and its own file dialogs. I am not sure you will like that, though.

This worked for me. Tools - Options - then navigate here and pick Colibre or one of the others.

To install others install 'LibreOffice-style-XXX' in Software Manager.
I changed to colibre but now I can't even the icons properly, because that is for light mode, breeze dark is fine, but I want to change the theme of LO to light or default. Perhaps the GTK is the problem. Any suggestion how to disable GTK integration?
