How to (re?)add a directory shortcut to the leftside of the "start menu"?
I removed a few shortcuts[1] from the left side of the "start menu"[2] and added Chrome.
First questions: how can I remove shortcuts?
I know removed "Firefox", but I don't remember how.
Second (and most important) question: how can I add shortcuts?
I know I added Chrome, but I am unable to add a shortcut to ~/Documents.
I think there were shortcuts to my home and some other directories, so I believe is is possible, but I don't know/remember how.
Also: What are [1] called? Shortcuts?
And what is [2] called?"Cinnamon menu"? "Menu"? "Start menu"?

Drag 'n' drop works. Menu->Internet>Firefox drag 'n' drop Firefox shortcut to the left

For adding an entry to the left bar (it is called favorites) you can right click a menu entry and select to add it to the favorites or via drag & drop.
For removing you can again use the right click menu of an entry or you drag the the icon a bit to the right.
The menu is Menu. You can find such things out, if you right click this thing (it is called applet) and open "about".

I added "Documents" to favorites and the "show favorites" options is enabled, but still nothing

Edit: right clicking doesn't show the "add to favorites" option.

I can drag and drop firefox (programs?) but apparently not directories.

The content of the Favorites section in the menu are files and folders, which you defined in your file manager as favorite.
The favorite bar in the menu (the compartment, where you placed the red arrow) are the favorites of the menu, that are 2 quite different things.
You cannot add an entry from the favorites section to the favorite bar. Only entries from the section above the Favorites section can be placed into the favorite bar.

You understood correctly, not possible.
But there is another solution, which might be interesting for you. There exists the favorites applet, you find it in the applet manager. Add this applet to your panel.

Turns out pressing "windows+e" opens Nemo, which is even more convenient then "windows + click somewherre".
I just gotta get used to it.

You might be interested to take a look into the keyboard settings to find (or configure) some shortcuts more.

I will add a post in a couple of minutes. I'm working on a virtual cinnamon machine, so there is some back, and forth.
Mint 20.0, and 21.0 MATE on Thinkpads, 3 X T420, T450, T470, and X200

To add your Documents folder to the favorites pane in nemo;
First create a new menu item,
right click on the Menu icon, click configure, click menu, click "open the menu editor"
Select any category you like on the left, I chose accessories, click the "new item" box.
Fill in the launcher properties box;
name = documents
command = nemo /home/$USER/Documents
You can at this point change the icon if you like, or can do that later.
Click OK, and close all that stuff
Click on the Menu, and in the accessories category you will find "documents" which you WILL be able to drag over to the favorites pane.
Done. Edit, PS since you like the "windows+e", you could as cosmo suggested make a keyboard shortcut straight to Documents, and use "windows+D".
I do like keyboard shortcuts for stuff I use a lot, like ksnip, gnote, etc.

Note, that Super-d (Win-d) is by default occupied for "show desktop".

Doh, I should have checked, I'm not a cinnamon user by default, and that key combo is free in MATE (it instead uses Ctrl+Alt+D to show desktop, well if you use default WM it does)
