Lest anyone else freak out like I did, this appears to be a one-time hiccup. The lack of recurrence is why I have posted under Beginner Questions rather than Installation and Boot. (I have screen photos, FWIW.)

I just updated to Kernel 5.4.0.121 on both my LM 20 & LM 19.3 boxen, and was quite freaked :shock: by the changes to my GRUB menu boot options on the LM19 box. Instead of "Linux Mint 19.3 MATE..." all options read "Ubuntu," at least on the first boot after installing the new kernel. The next 2 boots have shown the normal GRUB menu.

Go figure...but don't panic (imagine big, friendly letters).
