Adding new SSD drive and partitioning and creating RAID array and encrypting

Have added a 1TB SSD sata drive to original 350 GB nvme drive. partitioned 1TB drive into 2 equal parts. 500GB of SSD needs to be joined with 350 GB of nvme drive to allow more operating space along with LUKS encryption. Second 500 GB of 1TB drive will act as file storage and needs to be encrypted with LUKS as well.
Added "RAID designation to both nvme drive and first 500 gb partition using 'Flags'. Not sure if this is correct. Not able to encrypt both 500 GB partitions. Need help to achieve objectives

Why not move 350 GB to 1TB drive then expand and use the old 350GB for the second partition?

You do not mention the RAID type. Only RAID 0 handles unequal partition sizes and RAID 0 has no Redundancy, it is just AID. Recovery from a failure would be easier without AID 0.

The only reason I used RAID was to have any overflow from 350 GB move onto 500GB partition. If I move 350 GB onto 1TB drive, I assume you mean to "copy"/"move" everything on 350 GB nvme drive to 1 TB drive. Would that mean that all the boot info etc should go with it. This nvme drive was set up with a /boot/efi and a separate /boot, so can I "copy"/"move" the setup configuration on to the 1 TB drive? or recreate the configuration? Any programs and data on 350GB would then be copied transfered to 1 TB drive?

Once you have the successful 2 partitions with luks spanning them, and increase the main mint volume group, now you can expand the mint home volume that could end up on the second disk. A system partition of 100's GB is incredible overkill, typically, although you can eat up as much space as you like on /home user space.
