When creating a new folder I would like to have the same icon as 'Documents' or 'Templates' instead of the standard icon for a new folder. Is this possible?

You can but it's a bit messy, see http://ubuntuforums.org/showpost.php?p= ... ostcount=3 for more of an explanation. Basically within each theme there is a set of folders containing the icons for places and the default folder icon is just called folder.<image extension such as svg> whereas the 'special' home folders are call folder-documents, etc. You can simply create a link to point the folder icon to one of the others but you will need to do this for all the icon sizes in order for it to be scalable.
