What plasma version will be in the next Linux Mint KDE release?
Does anyone know what version of Plasma Linux Mint 18 KDE will have when it comes out this summer? Kubuntu 2016.04, just released, is using Plasma 5.5.5. Hopefully Linux Mint 18 KDE will be using Plasma 5.6.x.

Mint is based on Ubuntu, so when Ubuntu uses 5.5.5 then Mint will use 5.5.5

If you have to have the latest everything in linux you shouldn't use mint or ubuntu or fedora etc but a rolling release distro.
But if you do be prepared to fix things when they break sometimes after and update. Note I said when things break, not if. And rolling release distros aren't meant for noobs. Their support forums have a lot of expertise but they don't hold beginner hands. Even with Debian they'll just tell you to install ubuntu/mint.
