I've done some digging to no great avail around tablets that will run linux well. Mostly I'm looking to ditch Google altogether. Does anyone have any advice?

Most tablets use an ARM processor, so it will have to be a distro that supports ARM, like Ubuntu, Fedora, and Debian. There are more, but that's all that comes to mind at the moment.

I was really looking for peoples personal experience.
I've read a lot of mixed results with Ubuntu Touch on x86 devices.
I've seen some interesting hybrids running Cherry Trail CPUs but no one that has actually put Linux on one (like these: https://www.amazon.com/Windows-CHUWI-An ... ail+tablet)

Go to TechTablets Youtube channel. He's found some Apollo-Lake Celeron N3450 quad-core 2-in-1 tablets (usually 10" to 13" in size) that boot Manjaro and some with touchscreen working. He does not thoroughly test Linux though. Just boots Manjaro from a USB drive and quickly checks wifi, touch, screen brightness, etc. The basics. 8" size will probably have a Cherry-Trail Atom chip, which is like half the speed of the Celeron N3450, and might run Linux with the latest kernels but... will be harder to get working I think.
