Those looking to get it a little early, now can, as it's available in the 'stable' folder as of hours ago now
Please wait for the official release blog post which will have all the necessary notes and documentation. That blog post will also be announced on this forum.
While this is not a bug on Mint's end, I just noticed that the 'stable' Wine from official Wine website does not currently work on Mint 21 (i.e. "E: Unable to locate package winehq-stable"). but I suspect it's because there has been no 'stable' release for Ubuntu 22.04 yet as the current v7.0 was released early this year (Jan 2022) before Ubuntu 22.04 was released which I think was April or so (it appears that way by looking in the folder which probably explains that error). so, at least currently, one has to use either the 'development' or 'staging' branch if they want to use Wine from the official Wine website on Mint 21 as when trying to run the command for those (I tried 'Development') it attempts to go forward with the installation like expected, but I prefer to stick with 'stable' since unless someone really needs a really recent version, usually the newest stable is good enough.
but I know that the typical method the Mint team recommends (apt install wine-installer) will still work, but it's a older version of Wine, which appears to be v5.0.3 (or 6.0.3(?)).
but I just thought I would mention this for those looking to use a newer version of Wine. at least currently there is no 'stable' release for Ubuntu 22.04 (which as you already know is what Mint 21 series is based on).
so while I might still play around with it in a VM, I suspect it's probably a good idea for me to wait a while (maybe by v21.1 roughly 6 months from now it will be safer by then, as from what I can tell it seems they release a 'stable' version once a year, so roughly another 6 months from now) before switching from Mint v20.3-Xfce to Mint 21 series, especially on my primary computer.
