I've a brand new installation of Linux Mint 21.1. I've started to get mono space fonts on the terminal context menu:
Is this how it is in 21.1, or did I get some configs wrong (not that I've messed around)? I do remember these fonts used to be the regular ones, in older Linux Mint.

Changing themes, icons, fonts, ..., can change everything, but you can always go back to default settings, and start again.

No experience with the MATE edition but, no, on 21.1 Xfce the font's the standard configured one for interface. Some "Ubuntu" font IIRC, and in any case, not that font you show.
[EDIT] Actually, I retract the not monospace thing: comparing, that seems to be DejaVu Sans Mono Book. If it's only where you say it seems you would've needed to do this via MATE configuration somewhere. If more widely maybe you have uninstalled an "Ubuntu" font and have the system fall back to DejaVu.
