If you need the very latest Nvidia driver, use the semi-official graphics-drivers PPA:

The latest it contains is apparently the 545.29.06.
One should not confuse using the very latest driver with being safe from that alert. That is not what is described in the alert. Newer versions of the 525 and 535 drivers with the fixes have been released and I presume those will make their way into the repos if they are not there already. One does not need to use a PPA to get newer iterations of the same driver version they are using.

Yep, that 'alert' could make it look much safer than it is.
The thing is that in the world of Linux "stable release" doesn't mean what you might think it does. All it means is that they froze the features, it doesn't mean that it's ready to be used day to day. This even applies to the kernel, see https://www.kernel.org/category/releases.html
