Also a big consideration is the use the Liberation fonts from Red hat: THEY ARE OPENSOURCE and and alternative to the windows fonts https://www.redhat.com/promo/fonts/
I'm not sure but maybe Clem can bundle them and make it the default in for mint. That can take care of any windows font needs. As for the mac fonts, they look great. Especially since I have to use a mac at work, I've gotten quite used to see them. Nice write up.

error trying to select Lucida Mac
First of all, thanks for the How-to. I could follow it until the point where the Application font is to be changed. That is where the following error shows:
(gnome-font-properties:7269): Pango-WARNING **: shape engine failure, expect ugly output. the offending font is 'Lucida MAC Not-Rotated 9'
(gnome-font-properties:7269): Pango-WARNING **: pango_font_get_glyph_extents called with null font argument, expect ugly output
The preview of the type is a series of empty squares.
What is going on here? Thanks for your help!

Oops! Never Mind. I found it myself, it is caused by Permissions: the new Type files should have read permissions for Others (not just root)
