Hello steveringer08,
Welcome to Mint Forum
A search of Software Manager (Menu>System>Administration>Software Manager) under the "Office" or "Accessories" categories will probably produce a note-taking application.
Personally I just copy/paste snippets of code etc and type a brief explanatory note for future reference using gedit

I like exploring new applications when I get a chance to play. I found one recently that helps me with schoolwork and stuff, and I even wrote my own li'l blog post about it here! But the Mint Software Manager has them nicely categorized so they're easy to find.

Thank you Robin - I had Xournal installed on a previous version of Mint and found it very useful - after I did a clean install I couldn't remember what it was called.....been looking for it for days...
