Need help capturing analog V/A with Transcode or Mencoder

Hi I'm currently trying to figure out how to capture analog video and audio in real time with either Transcode or Mencoder preferably in mpeg4 asp with mpeg quantization with interlaced encoding enabled in 1 pass quantizer at q1 to q4 like in xvid

Note : I plan on capturing from both VHS and video game console footage for playthrough videos which I would have to compress in order to have any chance fitting it on my hard drive

I'm also running Linux Running Linux Mint 15 32-bit Mate edition and I am able to use VLC to watch and listen to captured video but capturing to file results in poor quality

My capture device is a Hauppauge USB-Live2 with rca composite and s-video composite plus rca audio cables to
mpeg4 asp mpeg quantization interlaced with 1 pass quantizer at q1 to q4 in real time in an widely supported container

video and audio source read like this in vlc:

VIDEO = /dev/video0
AUDIO = hw:1,0

You did not say what the analog source was or whether you wanted to transcode in real time (on the fly).
It may be easier to transfer the file (video, movie etc) from your analog source onto your drive and
then convert the file after.

The last link is probably the bestt o start with as Mint is a clone of Ubuntu all commands should work.
The links also provide alternatives to transcode and vlc such as avidemux so there is plenty of choice
in linux.

thanks for your reply but these tutorials aren't exactly what I'm looking for probably my fault for not being descriptive enough as I'm trying to capture from both VHS tapes and video game consoles through either plain composite or s-video in real time with video and audio in sync which I have heard somewhere the command line application Transcode is supposedly the best all around application for the job

also I have updated my first post with information about the source material and wanting to capture in real time
