I'm a little wary to update these packages straight away !

If you got an update for the package, then I see no reason why it wasn't updated. You can always look online. If it's a package from the standard repositories, you can look it up on Canonical's website. They have a lot of information on there about their packages, including, I believe, changelogs.

No background .. Just paranoia when its the bootloader / secureboot thingy etc

What he was talking about is not something you can just look up.
IMO if you're that hesitant to update a security related program you shouldn't be using it in the first place.

Then you should be doing the opposite of what you are doing. The point of updates is to fix potential security vulnerabilities. Refusing updates leaves your system more vulnerable. To be fair, the risk is small either way, but developers don't do updates because they're bored.
Have you set up Timeshift? That's your insurance policy against update mishaps. Mint added it to the system for this very reason.
As for the other question, the simplest way to research a package is Synaptic Package Manager, an app on Menu; for more info, do an internet search. Also, you can check update history in Update Manager (View > History); use Find (Ctrl-F) to search for a package name.
