Pulse Audio Works Sometimes

A slight simplification: I have several "regular" VMs (using spice) and one gpu passthrough.

Pulseaudio (well, pavucontrol, really) always "sees" and can thus volume control the regular VMs, but whether it sees the passthrough VM seems random. Sometimes it does, sometimes not. Sometimes killing pavucontrol and restarting it makes the passthrough vm appear in its list, sometimes not.

Is this normal behavior for Pulse Audio?

I've asked about this elsewhere, and gotten replies like "nobody uses pulse audio anymore! Get pipewire.". (Well mint does...)

Is pipewire as simple as uninstalling Pulse Audio and installing pipewire from the software manager? Do I have to configure it in some fashion? I have things kindof working now and would really rather not risk breaking mint if there's anything tricky about switching to pipewire.
